| STROOPWAFELS These delicious Caramel Cookie Waffles or Syrup Waffle (called Stroopwaffels by the Dutch) with richly filled chewy centers are one of Holland's true specialties. The stroopwafel originates from Gouda in the Netherlands. It was first made during the late 18th century. A baker from Gouda baked a waffle of old crumbs and spices and filled this waffle with syrup. The Stroopwafel was born. In fact the Stroopwafel was a rest product and therefore a popular pastry among the poor. At the beginning the Stroopwafel was only known in Gouda; nowadays every bakery in Gouda has its own recipe. |

| DROP A famous Dutch sweet is drop (liquorice). Dutch drop is sold in a large variety of shapes and forms. Drop can be either sweet or salty (or very salty). It is sometimes flavoured with coconut fondant (Engelse drop or English drop), honey (honingdrop), mint (muntdrop), salmiak (salmiakdrop), or laurel (laurierdrop). Typical shapes are lozenges, ovals, oblongs and coins. Honeycombs for honeydrop are also familiar. Some manufacturers have introduced specialty ranges where the drop is made in thematic shapes, such as cars (autodrop), farm animals and farm machine rys (boerderijdrop), etc. Liquorice candy is flavored with the extract of the roots of the liquorice plant, and usually anise oil as well. A wide variety of liquorice candies are produced around the world. In the U.S., liquorice candy is known as black licorice and commonly consists of chewy ropes or tubes. |

| POFFERTJES /
POFFERTJESPAN Poffertjes are a traditional Dutch batter treat. Poffertjes look like tiny/small pancakes, but they are much sweeter. They're fluffier than American pancakes because of the yeast. In contrast with pancakes, pofertjes are turned before one side is completely done, which results in a much softer core than pancakes have. Typically, poffertjes are served with powdered sugar and butter. Poffertjes are not hard to prepare but a special pan is needed, a poffertjespan. This is a special cast-iron or copper pan also available in aluminium with teflon-coating with several shallow indentations in the bottom. In large restaurants, special plates are often used to prepare poffertjes. Restaurant chefs are quite skilled in turning the almost baked poffertjes with a fork. |
